1.5 lbs ground beef

potatoes peeled and sliced
at least 4 asparagus spears per person
1. For each person thinly slice (about 1/8 inch) 2 red potatoes and place in pie pan or on a big piece of foil.
2. To make 6 Meat Patties- mix 1.5 pounds 85% lean ground beef, 2 eggs, 1 1/2 tsp. Dijon, 1 Tbsp. Worcestershire sauce, 1 tsp. salt and 1/2 tsp. pepper, and 1/2 cup finely chopped onions. Divide into 6 one inch thick patties.
3. Top each pan of potatoes with a meat patty and sprinkle the potatoes generously with seasoned salt or garlic salt and pepper, then drizzle with a olive oil, especially over the potatoes.
4. Cover with foil and bake at 400 degrees for 35-45 minutes or until potatoes are fork tender.
5. Serve with BBQ Sauce, Ketchup, or HP Sauce.

Roasted Chicken and Asparagus bites
ingredients:
4-6 chicken breasts
1lb asparagus
3T evoo
2t marjoram
2T lemon juice
2t minced garlic
salt and pepper
assembly:
chop chicken into bite sized pieces and add to the large zipper bag
chop asparagus into 2 inch pieces and add to the chicken
add next 5 ingredients and zip to seal
cooking directions
pour chicken/asparagus onto a large baking sheet sprayed with non stick spray. roast in 400 degree oven for 25 minutes or until chicken is cooked through.

balsamic asparagus
I know I have already posted a recipe for balsamic grilled asparagus, but last night the grill wasnt fired up (we have charcoal and it takes more prep...) so I tried a different approach....

INGREDIENTS:
1 bunch fresh asparagus (stalks all about the same size)
1 tbsp olive oil
freshly ground black pepper
1 tbsp (or more) balsamic vinegar
parmesan cheese (optional)
dash hot pepper flakes (optional)
1. prepare asparagus by washing and snapping off the tough ends
2. heat oil in frying pan
3. Add asparagus to the pan and keep it moving around for 3-5 minutes (or longer if softer veggies are desired) until it changes color. Add balsamic vinegar, freshly ground black pepper (and hot pepper flakes if desired)
4. Remove from heat and cover for a few minutes to let the flavors meld.
5. Sprinkle with parmesan cheese before serving if desired.

Balsamic Grilled Asparagus
Grilled Balsamic Asparagus

Ingredients -serves 4
1 lb fresh asparagus
1/2 cup balsamic vinegar
1/4 cup fresh lemon juice
2 tablespoons olive oil
2 tablespoons low sodium soy sauce
2-4 garlic cloves, minced
1 teaspoon kosher salt
fresh ground black pepper, to taste Directions
Snap off tough ends of asparagus and wash well through 2-3 changes of cold water.
Combine all ingredients in a large zip-top plastic bag, seal and marinate for 30-60 minutes. (I actually poured it into a large cup and placed the asparagus spears upside down in the cup to marinade)
Preheat grill on high heat.
Remove asparagus from bag/cup and place on preheated oiled grill rack.
Grill 5 minutes on each side or until asparagus is done.
You can either discard the marinade or place it in a small saucepan and bring it to a boil, reducing it down for a while and spoon over asparagus before serving.
