Eclair Cake

I've gotta get this on the blog soon before I lose the paper copy. It is SOOOOO good!
Topping-
1 stick margarine or butter
1 c sugar
1/3 c cocoa
1/4 c milk
1/8 t salt
1/2 t vanilla
melt butter in sauce pan, add other ingredients, mix and boil 1 minute. Remove from heat cool a little.
Filling
2 small boxes French Vanilla Pudding
3 cups milk
1 box graham crackers
mix until thick, Fold in 1 8 oz cool whip
Layer in 9x13 pan
Graham crackers left whole on bottom
half pudding
graham crackers
pudding (other half)
graham crackers
chocolate pour on top to coat.
I was thinking this would also be yummy with banana pudding too!

basic quiche
its amazing to me how different various quiche recipes can be! this one uses things that I usually have on hand, and can be adapted for other additions, so I am putting it on here:

my mom is amazing at marinades, and this is one she has made for us many times....although I am not sure this is her actual recipe, since I found it online....hopefully it is as good as hers since we are fixing it tonight!
