black beans tacos with cilantro slaw

2 cans black beans, drained and rinsed
1 can corn, drained
1 can rotel, drained
3/4 t cumin
1t seasoning salt

1 jalapeno (I used 1/2 seeded and de ribbed)
1/2 c chopped cilantro
16 oz shredded cole slaw mix
1/4 c lime juice
2T mayo

1/2 c queso fresco
small tortillas or tortilla chips
guacamole or avocado

mix first 5 ingredients in a large bag and mix.
chop cilantro and halapeno and add to large zipper bag. add next 4 ingredients, zip and squish around to mix.

microwave bean mixture until warmed through. assemble tacos and enjoy
also makes a delicious taco salad when served over broken chips!

**best eaten on day 1 or 2, maybe day 3....then the slaw mixture starts to break down.

I'm wanting to learn to cook with more seasonal vegetables, both from my garden and for my grocery budget sake. I love this idea!

this sounds like a nice way to use up leftovers. I often have leftover meat/vegetable casseroles from crockpot recipes and I'm looking for a way to change up the leftovers and sometimes I get tired of shepherds pies and pot pies...I know this is basically the same thing...but at least my family will think it looks different! :)

simple perfect chili

I have my own favorite go to recipe for chili...and I know Josh would love for me to just leave it alone, it's just fine the way it is...but I like to experiment a little bit....I also love her ideas of a chili burger, "traveling tacos" aka frito pie, and chili stuffed bell peppers...baked in the oven for 20-25 min at 375...brilliant and easy!

chile rellanos

not really sure how to spell the name of this dish...but here are several recipes I am considering trying with the poblano chiles that are in my garden:

I'm scared to death to do any canning, but this recipe is intriguing, so if I plant as many pepper plants next year as I did this year, maybe I'll get brave enough to can them like this....my guess is that my Texas born husband who ate hot peppers as baby food would enjoy these....pretty sure they will blow my top off!
