my kids really loved this!
1 lb frozen meatballs
6oz frozen spinach
2T tomato paste
3t minced garlic
1/4 t thyme
1/2 t basin
1/4 t red pepper flakes
1/4t salt
6c chicken broth
1/2 c small dried pasta (ditalini or shells)
add all the ingredients (except the pasta) to a slow cooker and cook on low for 6-8 hours. Add pasta last 30 minutes of cook time.

spanish style rice and beans

I think rachael ray is cute and all, I used to love to watch her shows, but once I got one of her cookbooks, I got a bit disillusioned....her recipes use like a GAZILLION ingredients, some of which are a little challenging (or expensive) to find, and she uses a TON of bowls/pans/utensils....so her 30 minutes DEFINITELY does NOT include shopping time OR clean up....regardless...I am looking for more ways to make inexpensive tasty meals, surely I can use this recipe as a base to make a slightly easier version
